Antifreeze proteins or also known as Ice structuring proteins are referring to a class of substances, called polypeptides, which are produced by certain plants and bacteria. This polypeptides permit to plants and bacteria to survive in sub-zero environments.
Antifreeze proteins bind ice crystals and inhibit recrystallization of ice. This ability of some insects, fish and sea plants is useful for sea life in the cold areas of the globe.
